About traditional soaking of grains to remove phytates.

The centuries-old process of soaking grains (and nuts and seeds), also known as culturing, helps to breakdown the anti-nutrients and digestibility of the grain, plus this process helps to release highly beneficial nutrients. Soaking grains is very easy. It just takes a little planning ahead. The result is a highly nutritious and easy to digest whole-grain food with superb robust flavor.

Essentially, soaking helps to breakdown the difficult to digest components of grains, called phytates. It’s done by soaking grains in water in a warm place with an enzyme-rich catalyst such as raw apple cider vinegar, lemon juice, whey, yogurt, or kefir for a period of time, usually overnight.
